Tart: Thyme Apple Tart with Almond Cream

Delicious apple individual tart flavored with almonds cream and fresh thyme.
List of Ingredients
4 x 7 inches square, puff pastry
4 tablespoons granulated sugar
2 Granny Smith apples
4 tablespoons melted butter
¼ cup apricot jam, heated (optional)
½ teaspoon cinnamon
1 tablespoon chopped fresh thyme
2 tablespoons soft butter
2 tablespoons icing sugar
½ tablespoon flour
2 tablespoons ground almonds
1 egg
Kirsch or rum to taste
Recipe
Preheat oven to 425º F. Make the almond cream by combining soft butter, icing sugar, flour, ground almonds, egg and kirsch or rum to taste. Reserve the Frangipane in cooler.
With a 6-inch round plate as a guide, using a sharp knife or pizza wheel cut 4 rounds out of the puff pastry. Place the rounds on a large baking sheet, lined with parchment paper, and use a fork to prick the center of each pastry round. Brush with butter & sprinkle each round with sugar & a pinch of cinnamon. Add a thin layer of Frangipane cream in the center leaving a ½ inch width around the sides with nothing.
Peel, core and slice the apples paper-thin. Arrange apple slices in overlapping rows across the pastry circles. Brush with butter & sprinkle each tart with 1 teaspoon of sugar and a pinch of fresh thyme.
Bake 20 to 30 minutes, or until the edges are puffed and golden. Brush each tart with warm apricot jam, if desired. Serve immediately with vanilla ice cream, if desired.
