Apple: Ann's Apple Pie

Recipe Introduction
I use Dad's pie crust recipe, (which is listed in this category) and I've come up with this great tasting filling after experimenting a few times. It's excellent and always gets rave reviews.
List of Ingredients
Prepare your favorite 2 piece 9" pie crust.
Filling:
6 to 8 apples, I use Granny Smith and Cortland apples
Juice from 1/2 fresh lemon
3/4 cup granulated sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
2 Tbls. all purpose flour
1/2 cup golden raisins (you can use the brown ones)
1/2 cup chopped walnuts
2 Tblsp. butter
Egg yolk for glaze
Recipe
Heat the oven to 425 degrees. Pare and core apples and slice into 1/4 inch pieces. Place the apples (about 6 cups) in a large mixing bowl. Pour the lemon juice over the apples and add the sugar, cinnamon, nutmeg, flour, raisins and walnuts. Toss well. Spoon the sliced apple mixture into bottom crust and dot with small pieces of butter. Cover mixture with top pie crust.
Brush crust beaten egg yolk and cut slits in the crust to let steam escape. Lay a sheet of aluminum foil on the rack below to catch any juices.
Bake for 45 minutes or until top is golden brown. Let pie cool. Slice and serve with vanilla ice cream or a slice of cheddar cheese.
Serves 8...maybe!
