Blind baking means partially or fully baking an unfilled pastry shell. There are several ways to blind bake; this recipe pricks the pastry to prevent it from puffing up as it bakes. Alternatively, you can fill the pastry with pie weights or dried beans. To do this, cut a piece of foil to overlap the pastry shell. Coat one side with vegetable oil spray to prevent the foil from sticking to the pastry. Place the coated side down and into the shell. Fill with weights or beans. Bake according to the time required in the recipe. Remove the foil a few minutes before, allowing the pastry crust to brown.
