    Chocolate: Mint Pie

    1 cup crushed chocolate covered mint cookies
    3 tbsp. hot water
    1 graham cracker crust/or choc. crust
    4 oz. cream cheese, softened
    1/4 tsp. peppermint extract
    3 1/2 cups (8oz) cool whip
    8-10 drops of green food coloring
    2 tbsp. milk
    1/3 cup sugar

    Recipe

    Mix cookies and hot water in small bowl. Spread evenly in bottom of crust. Beat cream cheese and sugar in large bowl with mixter until smooth. Add milk and peppermint extract; beat until smooth. Gently stir in whipped topping and food coloring. Spoon mixture into pie crust. Smooth top with spatula. Refrigerate 3 hours or until set. (I like to freeze mine for a little bit).
