    Coconut: Coconut Pie

    List of Ingredients

    1 ( 3 oz.) pkg. cream cheese, softened

    2 tblsp. sugar

    1 1/3 cups coconut

    1/2 tsp. almond extract

    1/2 cup milk

    1 ( 8 oz.) carton cool whip

    1 pie crust or graham cracker crust


    Recipe

    Combine cream cheese, sugar, milk and coconut in a blender for about 30 seconds. Fold into whipped topping, add almond extract. Spoon into crust and freeze until firm ( about 4 hours) Sprinkle with additional coconut (toasted, if desired). Let pie stand at room temperature 5 minutes before serving.
