4 pound broiler-fryer, cut up
1 carrot, sliced
1 onion, sliced
2 stalks celery, chopped
8 ounces mushrooms, sliced
1 teaspoon salt
1/8 teaspoon ground ginger
Sweet Potato Crust (Below)
Recipe
In a Dutch oven, cover chicken with water; cook until tender. Remove chicken and reserve 3 cups liquid. Cool chicken; remove skin and bones. Cut into bite-size pieces.
Add carrot, onion, celery, mushrooms, salt, and ginger to reserved chicken broth. Simmer until vegetables are tender. Stir in chicken.
Preheat oven to 400°F. Spray a 2-quart casserole with non-stick vegetable spray.
Pour chicken mixture into prepared casserole. Cover with Sweet Potato Crust. Cut 2 or 3 slits in center.
Bake 20 to 25 minutes until golden brown.
SWEET POTATO CRUST---
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup cold mashed sweet potatoes
1/3 cup butter or margarine, melted
1 egg, beaten
In a medium bowl, combine flour, baking powder, and salt. Work in sweet potatoes, butter, and egg until dough forms. Roll to 1/4-inch thickness.
