    1/4 cup butter or margarine
    1 pound mushrooms, sliced
    1 large onion, chopped
    1/4 cup all-purpose flour
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 cup milk
    1 cup chicken broth
    1 tablespoon dry sherry
    Pastry made with 1 cup flour
    Milk

    Preheat oven to 400°F. Spray a 9-inch deep-dish pie plate with non-stick vegetable spray.

    In a skillet, melt butter; sauté mushrooms and onion until tender. Sprinkle with flour, salt, and pepper. Gradually stir in milk and chicken broth; bring to a boil, stirring constantly. Pour into prepared pie plate.

    On a lightly floured board, roll pastry into 10-inch circle; place over mushroom mixture. Fold overhang under and flute. Make a steam hole in center. Brush pastry with milk.

    Bake 20 to 25 minutes or until pastry is golden brown.

    Serves 6
