    Entree: Meat Pie with Potato Crust

    1 medium onion, chopped
    2 tablespoons vegetable oil
    1 cup cooked meat, chopped
    1 cup milk
    1 cup chopped cooked carrots
    1 cup chopped cooked potatoes
    1 cup cooked peas
    1/2 teaspoon salt
    1/8 teaspoon pepper
    Potato Crust (below)

    Recipe



    Preheat oven to 350°F. Spray 8x8-inch baking pan with non-stick vegetable spray.

    In a large skillet, sauté onion in hot oil. Add the meat and brown. Add milk, vegetables, salt, and pepper. Pour into prepared baking pan. Cover with Potato Crust.

    Bake for 30 minutes or until golden brown.

    POTATO CRUST---

    1 cup hot mashed potatoes
    1/2 teaspoon salt
    1 teaspoon baking powder
    1 egg, beaten
    2 tablespoons butter or margarine, melted

    All-purpose flour




    In a large mixing bowl, combine potatoes, salt, baking powder, egg, butter, and enough flour to make a soft dough. On a well floured board, roll dough into an 8x8-inch square.
