    Entree: Salmon & Marjoram Pie

    List of Ingredients

    4 cups soft breadcrumbs
    3 Tbs butter
    3 Tbs plain flour
    3 cups milk
    1 lemon - for its juice
    1 x 440 grams (14 oz) can flaked salmon
    1 x 440 grams (14 oz) asparagus cuts - drained
    6 hard boiled eggs - sliced
    1 Tbs finely chopped marjoram
    1 Tbs finely choppled parsley
    2 Tbs cheese - grated

    Recipe

    Breadcrumb Crust: Toss 3 cups of soft breadcrumbs in melted butter until well coated.
    Reserve 1 cup for later, and press the rest firmly into the shape of an ovenproof plate. Brown in a moderate oven, 180*C (350*F) for 5 - 10 minutes.

    Filling: Make a white sauce by melting butter in a saucepan, blend in plain flour, add milk, sald
    and pepper to taste. Stir until thickened. Add the lemon juice, flaked salmon, drained asparagus cuts,
    eggs, marjoram and parsley.

    Pour into crumb crust, top with the reserved buttered crumbs and 2 Tbs of grated cheese. Bake in a moderate oven 180*C (350*F) until heated through and cheese is melted.

    SERVES 6
