    It's astonishing how many Irish pubs actually use Sloppy Joe sauce for their Shepherd's Pie... It sounds hokey, but it fits perfectly.

    List of Ingredients





    3 large potatoes (aim for 1-1/2 lbs)
    4 tablespoons butter
    1 large onion, coarsely chopped
    1 medium carrot, coarsely chopped (optional)
    1 jalapeno pepper, finely chopped (optional)
    1-1/2 lbs ground beef or turkey
    1/2 small bag frozen peas
    1 can sloppy joe sauce
    1/4 lb cream cheese
    1 egg
    1/4 cup sour cream
    1 clove garlic, chopped
    1 cup shredded cheddar (I recommend shredding your own)

    Recipe



    1. Preheat oven to 400 degrees (or wait until noted below).

    2. Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

    3. While the potatoes are cooking, melt butter in large frying pan and saute onions, carrot, and jalapeno in butter over medium heat for 5 minutes.

    4. Add ground beef to onions and saute until no longer pink. Add salt and pepper. (Preheat oven, if not already started) Add peas and sloppy joe sauce and cook, uncovered, over medium-low heat for 10 minutes. If mixture becomes dry, add slight amounts of water or Worcestershire sauce.

    5. Drain potatoes and mash. In large bowl beat cream cheese until smooth. Gradually beat in potatoes, egg and sour cream. Stir in garlic and cheddar, reserving a small handful of the cheese. Season with salt and pepper to taste.

    6. Place beef mixture in 9"x12" casserole dish. Distribute mashed potatoes on top, roughing up with a fork so that there are peaks that will brown nicely. Sprinkle little bits of cheese atop the potato mixture, but not enough to coat the entire top.

    7. Bake for 30 minutes, or until bubbling and brown. Broil for last few minutes if necessary to brown.
