Apple: Apple & Cream Cheese Pie

Crust:
1 refrigerated pie crust (from 15-ounce box), softened per directions
Streusel:
¾ cup brown sugar, packed
½ cup all-purpose flour
½ cup old-fashioned oats
¾ teaspoon apple pie spice
1/3 cup butter or margarine
Apple layer:
3 cups pared apples, sliced thinly
1/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon apple pie spice
Cream cheese layer:
1 8-ounce package cream cheese, softened
¼ cup sugar
1 egg
¼ teaspoon vanilla extract
Recipe
Heat oven to 450 degrees. Make pie crust as directed for one-crust baked pie shell, using 9-inch glass pie pan, except do not prick crust. Bake 9-11 minutes or until light brown. If crust puffs in center, flatten gently with back of wooden spoon. Reduce heat to 350 degrees.
In small bowl, stir together streusel ingredients except butter. With pastry blender or fork, cut in butter until mixture looks like coarse crumbs. Set aside.
In large bowl, gently mix apple layer ingredients. Set aside.
In small bowl, beat cream cheese and ¼ cup granulated sugar on low speed until blended well. Add egg and vanilla; beat well. Spread in crust-lined pan. Spoon apple mixture evenly over cream cheese layer and sprinkle with streusel.
Bake in preheated oven for 50-60 minutes or until apples are tender and streusel is golden brown. If necessary, cover pie loosely with foil during last 10-15 minutes of baking to prevent overbrowning. Cool at least 1 hour before serving. Store covered in refrigerator.
