    Peach: Golden Coconut Peach Pie

    List of Ingredients

    4 1/2 cups fresh peaches -- sliced
    1/2 cup sugar
    3 tablespoons flour
    1/4 teaspoon nutmeg
    1/4 teaspoon salt
    1/4 cup orange juice
    9 inch unbaked pie shell
    2 tablespoons butter
    2 cups flaked coconut
    1 egg -- beaten
    1/4 cup sugar
    1/4 teaspoon almond extract


    Recipe

    1. Mix together peaches, sugar, flour, nutmeg, salt and orange juice in a medium bowl. Pour mixture into pie shell.

    2. Dot pie filling with butter and bake at 450F for 15 minutes.

    3. Meanwhile, combine coconut, milk, egg, sugar and almond. Pour over hot peach mixture. Reduce heat to 350F and bake until coconut is toasted, about 30 minutes.

    4. Chill pie.
