    Lime: Key Lime Pie Supreme

    1-1/2 teaspoons unflavored gelatin (one envelope)
    1-1/4 cups sugar, divided
    1/4 teaspoon Kosher salt
    4 eggs separated yolks
    1/2 cup Key lime juice, (no substitutes)
    1/4 cup water
    2 drops green food coloring
    1 cup whipping cream
    1 9-inch pie shell (recipe below)

    Recipe

    In a saucepan combine unflavored gelatin, sugar and salt; set aside. Beat egg yolks, Key lime juice and water until blended; stir into gelatin mixture. Place over medium heat stirring constantly until mixture comes to a boil. Remove saucepan from heat; add green food coloring; blend well. Chill thoroughly, stirring occasionally until mixture thickens slightly.

    In a clean bowl, beat egg whites until soft peaks form, gradually add 1/2 cup sugar and beat until stiff peaks form. Fold the chilled lime mixture into the stiffly beaten egg whites. In a clean bowl, whip the cream, gradually add 1/4 cup sugar and beat to a soft peak stage. Fold the whipped cream into the lime mixture and place in the cooled, baked pie shell.


    FLAKY PIE CRUST

    makes one crust

    1 cup all purpose flour
    1/4 teaspoon Kosher salt
    1/8 teaspoon sugar
    1-1/2 tablespoons Crisco, chilled
    1/4 cup butter, frozen and coarsely grated
    ice water

    In a food processor, pulse the flour, salt and sugar. Gradually add the Crisco and butter until well blended. Add small amounts of ice water until mixture forms a ball. Remove from processor bowl, wrap in plastic and chill for 30 minutes. Remove dough from plastic and roll out to fit a 9-inch pie pan, poke holes in dough with a fork and bake at 450° degrees F. for approximately 8 to 10 minutes. Remove from oven and cool completely.
