Fruit: Orange Pineapple Pie

Crust:
1 1/2 cups graham cracker crumbs
1/4 cup butter, melted
Filling:
1 cup evaporated milk
2/3 cup water
1/3 cup orange juice
1 3-oz. package orange gelatin
1/4 cup sugar
1 tsp. grated orange rind
1/2 cup crushed pineapple, drained
2 tablespoons lemon juice
Recipe
Assemble crust:
Combine graham cracker crumbs with butter and press into bottom and sides of a 9-inch pie plate. Set asside.
Make filling:
Pour evaporated milk into ice cube tray and place in freezer until ice crystals form around edges of tray. Meanwhile heat water and orange juice to a boil. In a medium bowl combine sugar and gelatin. Pour boiling liquid into geletin bixture, stirring until dissolved. Add orange rind and drained pineapple. Chill in refrigerator until thick and syrupy.
Put partially frozen evaporated milk into a bowl and whip with electric mixer until stiff. Add lemon juice and continue whipping until very stiff. Fold whipped mixture into chilled gelatin. Spoon filling into crust and chill for at least 2 hours.
