    Fruit: Key Lime Pie w/Macadamia Nut Crust

    List of Ingredients

    3 1/2 ounces macadamia nuts (toast and grind)
    1 cup vanilla wafer crumbs
    1 tablespoon sugar
    1/2 stick butter, melted
    1/2 cup lime juice
    8 egg yolks
    28 ounces sweetened condensed milk

    Recipe

    Mix cookies, sugar, nuts and butter. Press into 10-inch pie pan. Bake at 350 degrees for 10 minutes, cool slightly.
    Beat egg yolks, add condensed milk and lime juice, and beat until mixture resembles custard. Pour into shell.
    Bake at 350 degrees for 10 to 15 minutes.
    Chill at least four hours and serve.

    YIELD: 8 Servings
