    Custard: Rhubarb Custard Pie

    List of Ingredients

    1 10-inch unbaked pie crust
    1 cup sugar
    1 cup milk
    3 large eggs
    1 tsp. vanilla
    1 pinch salt
    4 cups chopped rhubarb

    Recipe

    Fill pastry crust with rhubarb. Mix sugar and milk until sugar is dissolved. Add slightly beaten eggs, vanilla and salt and pour over the rhubarb. Bake at 325º for 90 minutes, or until knife comes out of center clean.

    NOTE: YOU MAY WANT TO COVER CRUST RIM WITH FOIL TO PROTECT IT FROM BURNING.
