President Carter's Fried Fish

- 2 pounds fresh swordfish or catfish
- 2 Tblsp. Worcestershire sauce
- Juice of 1 lemon
- 1 Tblsp. dry mustard
- 1 Tblsp. salt
- 1 tsp. freshly ground white pepper
- 2 quarts vegetable oil
- 2 Tblsp. flour
Instructions
- Cut fish into french-fry size strips. Layer in a square pan or casserole dish.
- In a small mixing bowl, combine Worcestershire sauce, lemon juice, mustard, salt, and pepper; pour over fish. Cover pan tightly with plastic wrap. Let marinate for 2 - 3 hours.
- In a large cast-iron skillet, heat oil to 375 degrees. Spread flour in a shallow dish; dredge fish strips and transfer to hot oil one strip at a time.
- Fry for 5 minutes or until golden brown and crisp; turn fish with a slotted spoon to brown evenly.
- Drain on paper towels. Serve hot.
