NOTES from Roma: "Everyone seems to like the way I do pork tenderloin. I do it a lot for company dinners because it's so easy and you can't kill a pork tenderloin. Well, maybe you can, but this is easy."

A pork tenderloin of desired size
some booze
some preserves
a can of whole berry cranberry sauce
ginger
brown sugarRecipe
I use a whole can of whole cranberries, plop it in a bowl. Add 1/2 cup of brandy or port wine. Probably any booze will do.
Throw in about 1/2 cup of marmalade or apricot jam, something fruity and gooey will work, add about a tablespoon of ginger and equal amount of brown sugar.
Schlep it all up and pack it around the roast then stick in the oven and cook as usual. It makes a nice sauce and looks pretty. I vary what I throw into the glob.
This year I'm going to chop up some dried apricots and dried cranberries. What the heck! ----Roma
