    African Peanut Butter Chicken

    Source of Recipe

    Newman's Own

    List of Ingredients

6 chicken breast halves with bone (about 3 lbs.), skin removed
    1 Tbsp vegetable oil
    2 tsp salt
    1 tsp curry powder
1 large onion, peeled and thinly sliced
1 large red pepper, cut into thin strips
    1 cup Newman's Own® Mild Salsa
    1 large tomato, thinly sliced
    1 ½ cups uncooked rice
    ¼ cup crunchy peanut butter
    ¼ cup warm water

    Recipe

In nonstick 12-inch skillet over medium heat, cook chicken in batches in vegetable oil for 5 minutes, turning once, until golden; remove and set aside.

Reduce heat to medium; add salt, curry powder, onion, and red pepper; cook 1 minute, stirring. Add salsa and tomato to skillet; cover and simmer 5 minutes. Return chicken to skillet. Cover and simmer over medium-low heat for 25 minutes or until chicken is cooked through.

While chicken cooks, cook rice as label directs. Spoon onto a large platter. Arrange chicken on top; keep warm.

Whisk peanut butter with warm water in a cup. Stir into vegetable mixture in skillet; heat to boiling. Spoon over chicken and rice.

    SERVES 6
