Apple Cider Chicken

2 chicken breasts, cut in two pieces each
2 leg and thigh pieces, cut at the joint
flour, salt, pepper
Oil, for frying
1 large shallot, minced
1 small clove garlic, peeled and cracked
2 tablespoons all purpose flour
4-6 apples, pared, cored, cut in wedges
2 cups chicken broth
1 /2 cups apple cider
1/4 cup light cream, optional
Recipe
Heat some oil in a Dutch oven (about 2-4 tablespoons).
Dredge chicken pieces in flour and dust with salt and pepper.
Sauté to brown, turning once, about 5-8 minutes per side.
Drain on paper towels.
Drain most of fat out of Dutch oven.
Preheat oven to 375 F.
Sauté the minced shallot in the same Dutch oven. Then add garlic, and about 2 tablespoons of flour. Stir to cook shallot and brown flour. Pour on chicken bouillon or broth and simmer 1-3 minutes to allow to thicken.
Place chicken pieces in broth, and dump apples on top. Pour on the thickened chicken broth. Add cider to the same skillet and simmer to reduce by half. Drizzle over chicken.
Cover and place in oven, reducing heat to 350 F. Bake until tender, about 30 minutes, reduce heat to 325 F and pour on cream if using.
Bake another 15 minutes.
