Wash 3 pounds frying chicken pieces. Pat dry. Dip chicken in mixture of 1/4 cup melted butter, 3 tablespoon lemon juice and 1 teaspoon grated lemon peel. To make the corn flake crumbs, pour flakes into a sealable plastic bag and roll with a rolling pin until crushed.Coat with mixture of 1-1/4 cups corn flake crumbs, 1 teaspoon salt and 1/4 teaspoon pepper. Place in single layer, skin side up, in well-greased or foil-lined shallow baking pan. Drizzle with 3 tablespoons melted butter, if desired. Bake at 350 about 1 hour or until chicken is tender. Do not cover pan or turn chicken while baking.
