    1 tablespoon vegetable oil
    1 pound boneless, skinless chicken breast halves, cut into strips
    1 cup water
    1 (1.5 oz.) package burrito seasoning mix
    1 (16 oz.) can refried beans (fat-free or regular)
    8 - 10 inch burrito-size flour tortillas, warmed
    2 cups shredded iceberg lettuce
    1 cup shredded Monterey Jack or shredded mild cheddar cheese
    2 tablespoons grated Parmesan cheese
    1/2 cup sliced green onions

    Recipe



    Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes or until no longer pink. Stir in water and seasoning mix. Bring to a boil and reduce heat to low; simmer for 3-4 minutes or until mixture thickens. Stir in the refried beans and cook for 1-2 minutes to heat through. (Add a tablespoon of
    water if mixture seems very dry.)

    Mix the Monterey Jack and Parmesan cheeses together in a small bowl.

    Lay out the warm tortillas on a counter and spread 1/2 cup filling on each. Divide the lettuce, cheese mixture and green onions evenly among the burritos. Roll them up, folding ends toward center halfway through the rolling process to completely enclose the filling.
