Cranberry-Russian Chicken

1 envelope onion soup mix
1 8-ounce bottle Red Russian salad dressing
1 15 ounce can whole berry cranberry sauce
4 to 6 boneless, skinless chicken breast halves, thawed
3 cups hot cooked rice
Recipe
In a bowl, combine soup mix, salad dressing and cranberry sauce; mix well. Place chicken in a shallow 2 or 3 quart baking dish that has been coated with nonstick booking spray. Pour sauce mixture over chicken; cover with aluminum foil.
Bake at 350 degrees for 20 minutes. Uncover and bake 20 minutes longer or until chicken juices run clear. Serve over rice with sauce.
Yield: 4-6 servings
