Crispy Chicken on Stir Fried Veggies & Pasta

List of Ingredients
4 boneless skinless chicken breast
1 1/2 cups seasoned bread crumbs
egg wash (1 egg beaten in 1 cup milk)
oil for frying
1 each medium red & green pepper (julienne cut)
2 green onion, cut on an angle (bias)
1 tbsp. minced ginger
1/2 tsp. curry powder
1/4 tsp. crushed chillies
3 cloves garlic, minced
4 cups cooked pasta (spaghetti works fine)
4 tbsp. black bean sauce
1 tbsp. fresh lime juice
Recipe
Dip chicken breast in egg wash and coat in crumbs.
In a saute pan, cook over medium-high until well browned on both sides, about 10 minutes. Put chicken in a 350F oven to finish while cooking veggies (20 minutes).
Saute peppers and onions with a pinch of salt, curry & chillies over medium heat for 5 minutes or until onions are translucent.
Add ginger and garlic and cook a couple minutes (do not brown garlic).
Add cooked pasta, black bean sauce and lime juice and heat through.
Serving Suggestions:
Serve pasta and veggies on four plates, then cut chicken in fingers and serve over the top. Yum!
Additional Comments:
Try different pastas such as penne rigate, rotini, etc.
