    Entree: Alaska Dungess Crab Gratin - 24

    List of Ingredients


    1/2 cup butter
    1 qt leeks, chopped
    1 cup flour
    1-1/2 qts milk, whole
    1 qt heavy cream
    3 cups shredded sharp cheddar cheese
    3 cups Parmesan cheese, grated
    1/4 cup thyme, fresh, chopped
    3/4 tsp nutmeg, grated
    Salt and pepper, as needed
    9 lbs Alaska Dungeness Crabmeat, thawed if necessary
    Paprika, as needed

    Recipe

    Melt butter in large saucepan over medium heat; add leeks. Saute stirring 5 minutes. Stir in flour, cook, stirring 3 minutes. Add milk and cream; cook, stirring until sauce thickens. Add cheese, thyme and nutmeg; cook and continue stirring until cheeses melt. Season with salt and pepper. Cover and keep warm until ready to use.

    For each serving: Portion 1 cup (6 oz ) crabmeat into 1 cup gratin dish. Spoon over 1/2 cup cheese sauce; broil 5-6 inches from heat until crab is hot and sauce bubbles and is lightly browned. Dust lightly with paprika.
