    Bread: Date Nute Bread - 100

    Servings: YIELD: 100 Portions (8 Loaves)
    Portions: 2 Slices each
    Pan Size: 16 by 4 1/2 by 4 1/8-inch Loaf-Type Pan
    Temperature: 300 degrees F. Oven


    INGREDIENTS

    1 gal Dates, pieces
    6 tbsp Baking soda
    3 1/4 qt Water, boiling
    1 1/2 cups Butter or margarine, softened
    1 gal Sugar, granulated
    3 cups (15 eggs) Eggs
    1/4 cup Vanilla
    2 gal Flour, wheat, general purpose, sifted
    1 2/3 tbsp Salt
    2 qt Nuts, unsalted, chopped


    INSTRUCTIONS

    1. Combine dates, baking soda and boiling water. Let stand 20 minutes; set aside for use in Step 5.
    2. Place butter or margarine and sugar in mixer bowl; cream at medium speed until light and fluffy.
    3. Add eggs and vanilla; blend well at low speed.
    4. Sift together flour and salt.
    5. Add date mixture and dry ingredients alternately to mixture; blend well after each addition.
    6. Add nuts; mix well.
    7. Pour 1 1/2 qt (about 3 lb 12 oz)batter into each well-greased pan.
    8. Bake 90 minutes or until done.
    9. Cool thoroughly; wrap in waxed paper and store overnight before slicing.
    10. Cut 25 slices (about 1/2-inch thick) per loaf.
