Bread: Cheese and Pesto Crostini - 50

50 baguette slices, sliced diagonally
1 cup prepared or purchased pesto
12 ounces mozzarella cheese, cut into 50 thin triangular slices
50 roasted red pepper strips, about 1-by-1/2-inch
Recipe
Toast baguette slices on baking sheet at 400 degrees 5 to 10 minutes, or until lightly browned, turning once. Spread each with pesto. Top each with cheese and red pepper strip and return to oven just until cheese melts. Serve warm.
Makes 50 servings.
