    Dessert: Australian Pavlova - 32

    List of Ingredients

    16 egg whites, room temperature
    1/4 teaspoon salt
    1 quart sugar, super-fine
    4 teaspoons vinegar
    4 teaspoons cornstarch
    2 tablespoons McCormick Vanilla Extract
    2 quarts whipping cream
    3 cups sugar, 10X
    2 quarts strawberries
    12 kiwi fruit

    Recipe

    1. Beat egg whites with salt. Gradually add sugar, beating until very thick.

    2. Beat in vinegar, cornstarch, and 1 tablespoon vanilla.

    3. Grease 4 baking sheets and dust heavily with cornstarch.

    4. Spoon meringue in center of each baking sheet, dividing evenly in 4 lots. Spread each meringue to form a 9-inch round or oval. Bake in 275°F. oven, 1 hour. Do not brown. Cool.

    5. Place each meringue on a serving plate.

    6. Whip cream with 10X sugar and 1 tablespoon vanilla until very stiff. Chill.

    7. Clean and slice strawberries. Peel and slice kiwi fruit. Save some whole berries and kiwi slices for garnish.

    8. Spoon sliced berries and kiwi on the four meringues.

    9. Using a pastry bag with large star tip, pipe whipped cream to cover top and sides, covering meringue and fruit. Garnish with reserved fruit. Chill. Cut in wedges for serving.

    YIELD: 4 pavlovas, 32 to 40 slices
