    List of Ingredients




    13 pounds chicken parts
    6 ounces shortening
    2 1/2 pounds rice, long-grain
    3 quarts tomatoes, canned, whole, Italian-style, with liquid
    2 quarts water, hot
    1 tablespoon salt
    1 teaspoon McCormick Turmeric
    1/2 teaspoon McCormick Ground Black Pepper
    1 teaspoon McCormickTarragon
    1 1/2 teaspoon McCormick Oregano
    1 teaspoon McCormick Marjoram

    Recipe



    1. Rinse and dry chicken parts. Brown in shortening.

    2. Put half of the rice in each of two 12 x 20 x 3-inch pans.

    3. Place chicken pieces in single layer over rice in each pan.

    4. Pour tomatoes over chicken.

    5. Combine remaining ingredients. Pour half of this mixture around chicken in each pan.

    6. Cover. Bake in 350° F. oven, 1 hour.

    YIELD: 30 Servings
