    List of Ingredients




    48 chicken breast halves, boneless, skinless
    2 cups flour
    1 tablespoon McCormick Italian Seasoning
    1 tablespoon salt
    1 teaspoon McCormick White Pepper
    4 eggs
    1 cup water
    Oil for frying
    1 ( 16 -ounce) package McCormick Spaghetti Sauce Mix (prepared following package directions)
    4 1/2 pounds mozzarella cheese, shredded

    Recipe



    1. Trim chicken breasts, if necessary.

    2. Mix flour, Italian Seasoning, salt, and pepper.

    3. Beat eggs with water.

    4. Dip chicken pieces in egg wash and dredge in seasoned flour.

    5. Fry chicken in hot oil until lightly browned.

    6. Place 24 chicken pieces in each of two steam table pans.

    7. Pour 1 gallon plus 1 quart Spaghetti Sauce over chicken in each pan.

    8. Sprinkle 2-1/4 pounds cheese evenly over top of sauce in each pan.

    9. Bake at 350° F., 30 minutes. Hold in steam table for serving.



    YIELD: 48 half chicken breasts with sauce and cheese
