3 to 3-1/2 pounds chicken, Cornish hen, or turkey, bone-in
Flour for dusting
Oil
1/4 pound diced bacon
1 tablespoon McCormick Minced Onion
2 cups quartered mushrooms
1/2 cup white wine
2 teaspoons McCormick Savory Leaves
1 teaspoon McCormick Rosemary Leaves
1-1/2 cups brown stockRecipe
1. Heat oil in skillet.
2. Dust poultry with flour and brown in skillet until golden.
3. Lightly saute bacon, onion, and mushrooms; degrease the pan.
4. Deglaze the pan with the wine, savory, rosemary, and brown stock.
5. Cover and simmer 30 to 35 minutes or until meat is fork tender.
6. Do not allow liquid to boil when braising; a slow simmer will produce a rich, full-bodied sauce. Baste the meat frequently.
7. Serve with wild rice blend or noodles.
