Soup: Bahamian Fish Chowder - 24

List of Ingredients
4 onions, medium
4 garlic cloves, finely chopped
4 red bell peppers, cut into 1/4" dice
2 teaspoons McCormick Curry Powder
1/3 cup olive oil
1 #10 can tomatoes, whole
1/2 gallon clam juice
1 1/2 grated rind of oranges
1 tablespoon salt
2 tablespoons McCormick Caribbean Jerk Seasoning
4 pounds fish fillets, firm, white, cut into 1/2" cubes (Snapper, monkfish, sea bass are good)
2 bunches scallions, chopped
Recipe
1. Saute onions, garlic, peppers, and curry powder in olive oil in uncovered soup pot until the peppers are soft.
2. Drain the tomatoes and add the liquid to onion mixture. Coarsely chop the tomatoes and add to pot along with clam juice, orange rind, salt, and Caribbean Jerk seasoning. Bring to a boil and simmer, uncovered for 5 minutes.
3. Add fish, cover and cook 2 to 3 minutes; adjuct seasoning.
4. Garnish with scallions.
