    Vegetable: Asparagus and Tomato Salad

    List of Ingredients

    1 lb fresh asparagus

    4 medium tomatoes; cut into wedges

    3 cups sliced fresh mushrooms

    1 small green pepper sliced thin (optional)*

    1/4 cup oil

    2 Tbls. cider vinegar

    1 tsp garlic salt

    1 tsp dried tarragon

    salt and pepper taste

    dash of hot sauce


    Recipe



    Cut asparagus into 1" pieces amd cook in small amount of water till crisp tender; about 3-4 minutes. Drain and rinse in cold water.


    Place asparagus in a large bowl; add tomatoes, mushrooms,and green pepper.*


    In a small bowl mix well the remaining ingredients.


    Pour over the vegtables. Toss to coat.


    Cover and refigerate for at least 2 hours.(Overnight is best.)
