Vegetable: Chilled Summer Salad

2 medium zucchini, cut in half lengthwise and thinly sliced
1 pint cherry tomatoes, quartered
1 medium green bell pepper, chopped
1 medium onion, chopped
1/2 pound sharp white Cheddar cheese, diced
1/4 cup mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
1 tablespoon fresh dillweed (1 teaspoon dried)
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Recipe
In a large bowl, combine the zucchini, tomatoes, green pepper, onion, and cheese; mix well. In a small bowl, combine the remaining ingredients; mix well.
Add the mayonnaise mixture to the tomato mixture and toss until well coated.
Cover and chill for at least 2 hours, or until ready to serve.
