    Dressing: Vinaigrette of Shallots and Chives

    List of Ingredients

    1/2 cup chopped shallots
    1 bunch chives, chopped ( use scissors for small chop)
    6 tablespoons rice wine vinegar
    1 1/2 teaspoons mustard
    1 3/4 tablespoons extra virgin olive oil


    Recipe

    Whisk shallots, vinegar and mustard together.


    Add the oil in a slow, steady stream until well combined.


    Taste for salt and pepper and add if desired kosher salt and cracked black pepper.


    Add chives before tossing with salad or vegetables.

    YIELD: 1 Cup
