66.5 oz. Chicken of the Sea® Solid White Albacore Tuna in Spring Water
11 oz. avocado, diced
22 1 oz. portions reduced fat cheddar cheese, shredded
66 cups mixed salad green (romaine, leaf, radicchio, savoy, and endive)
11 cups tomato,diced
2.75 cups black olives, sliced
5.5 cups chickpeas (garbanzo beans)
5.5 cups chili beans
5.5 cups cilantro dressing (recipe follows)
175 reduced fat "light" ranch tortilla chips
2.75 cups salsa
Recipe
For each serving arrange 3 cups of lettuce on serving plate. Layer 3oz. of tuna, ? cup tomato, 1 tablespoon avocado, 2 tablespoons olives, ? cup chickpeas, and ? cup beans. Spoon 2 oz. dressing on salad, sprinkle with 1oz. cheese and garnish with 8 tortilla chips and 2 tablespoons salsa.
Dressing:
3 cups buttermilk
1 cup light mayonnaise
1 cup light sour cream
? cup green onion
? cup cilantro, chopped
2 cloves garlic, crushed
1 tablespoon lime juice
? teaspoon pepper
? teaspoon chili powder
? teaspoon salt
Stir ingredients together and let marinate 1 hour.
