Recipe Introduction
Fresh greens with tuna, hearts of palm, artichokes and a light balsamic vinaigrette make a hearty main dish salad.
List of Ingredients
• 1 can tuna, packed in olive oil
• 1 head iceberg lettuce, chopped
• 1 bag 16 oz fresh prewashed spinach
• 2 cups carrots, grated
• 1 bag cherry tomatoes
• 1 white sweet onion, finely chopped
• 1 can water packed hearts of palm
• 1 fresh can or bottle artichoke hearts, packed in oil
• 1/2 cup sliced black olives
• 1 cup sliced fresh mushrooms
• 1 bottle high quality Italian balsamic vinegar
• 1 bottle extra virgin olive oil, or grapeseed oil Recipe
In a large bowl place lettuce, torn to bite size pieces, and spinach leaves. Add carrots, onion, black olives and mushrooms. Slice cherry tomatoes in half and add. Slice hearts of palm into 1/2 inch slices and add. Slice or quarter artichoke hearts and add then toss well. In a shakable bottle mix 1/3 cup balsamic vinegar to 3/4 cup olive or grape seed oil. Place a large amount of salad onto a large platter as this is not a side salad. Drain one can tuna per person, lightly break it up with a fork and place on top of the salad on individual plates. You can serve balsamic vinegar and olive oil (or grape seed oil) on the side.
