    Green: Garden Vinegrette Salad

    List of Ingredients


    2 large ripe tomatoes
    2 green peppers
    1 red onion
    2 medium cucumbers
    1 teaspoon basil
    1 teaspoon thyme
    salt and black pepper
    1/2 red wine vinegar
    1/2 cup olive oil

    Recipe

    1. In large bowl, add ingredients in order.
    2. Dice tomato.
    3. Cut peppers into rings.
    4. cut onion into rings.
    5. Slice cucumbers into thin slices.
    6. Salt/pepper to taste.
    7. Add Thyme and Basil, red wine vinegar, olive oil.
    8. Toss to coat vegetables in oil and vinegar.
    9. Allow to marinate at least 30 minutes.
    10. Can serve cold or at room temp.

    Suggestion: Add pasta for a tasty pasta salad.
