    This recipe is originating from North Africa. The mint gives a fresh taste and makes it an ideal summer salad.

    List of Ingredients




    3/4 cup couscous semolina
    1 bunch parsley
    4 spring onions
    4 medium tomatoes
    5 leaves of fresh mint
    1/4 cup lemon juice
    3 tablespoons olive oil
    salt and pepper to your taste
    1 cup of raisins

    Recipe



    Cook your couscous according to the direction on the box. Don't add butter though !Let it cool down. Separate the grains with a fork.

    Soak the raisins in hot water to re-hydrate them.

    Finely chop the parsley, the mint and the spring onions. Finely dice the tomatoes. Drain the raisins.

    Place all the ingredients in a large bowl and toss well to combine. Refrigerate until ready to serve.


    Serves 8
