Potato: Grandma Helen's Potato Salad

List of Ingredients
---For boiled dressing:
3 tablespoons all-purpose flour
1 tablespoon granulated sugar
2 teaspoons dry mustard
1 teaspoon salt
2 eggs, beaten
3 tablespoons salad oil
1 cup milk
1/3 cup vinegar
---For potato salad:
4 pounds potatoes, boiled in their jackets, cooled, peeled and sliced
8 hard-cooked eggs, peeled, coarsely chopped
10 slices bacon, cooked, drained, coarsely chopped
1 cup diced celery
1/4 cup diced sweet onion or chopped scallions
2 tablespoons chopped fresh Italian parsley
1 cup mayonnaise or Miracle Whip
Recipe
1. In a heavy, 2-quart nonstick saucepan, mix together the flour, sugar, mustard and salt. Add the eggs and beat well. Stir in the salad oil and place over low heat. Stirring constantly, slowly add the milk alternately with the vinegar. Cook until the mixture is thick and smooth. Remove from the heat then chill.
2. In a large bowl combine the eggs, bacon, celery, onion, parsley, mayonnaise and boiled dressing and mix well. Gently fold in the potatoes. Refrigerate until serving.
Makes 20 servings.
