    Potato: Mo's Potato Salad

    Ingredients for Dressing:

    1/2 cup cider vinegar

    1/4 cup vegetable oil

    1 1/2 teaspoon salt

    1 tsp. pepper

    Ingredients for Salad:

    8 large red potatoes (3-1/2 lbs.)

    1 tablespoon Dijon mustard

    1 1/2 cups mayonnaise

    1/4 cup milk

    1 1/2 cups celery, chopped

    1/2 cup red onion, chopped

    8 slices bacon, cooked and crumbled

    1/4 cup parsley, chopped

    4 hard boiled eggs, chopped

    Recipe



    Whisk all dressing ingredients in large bowl until blended.

    In saucepan, cover potatoes with water, bring to a boil. Simmer covered for 20-25 minutes until tender. Remove skins while warm.

    Cut potatoes into 1-inch chunks. Add to dressing, mix and stir until dressing is absorbed.

    In separate bowl, mix mustard, mayonnaise and milk. Add celery, onion, bacon and 2 tablespoons of parsley. Mix well.

    Add to potatoes and mix. Cover and chill 2 hours to 2 days.

    Before serving garnish with remaining parsley and hard- boiled eggs.
