    Potato: New Potato Salad w/Blue Cheese Vinaigrette

    List of Ingredients

    ---SALAD---
    2 lb. new potatoes, cut into wedges
    1 cup sliced celery
    1/4 cup chopped red onion
    2 tablespoons chopped fresh parsley
    2 tablespoons crumbled blue cheese

    ---VINAIGRETTE---
    1/4 cup white vinegar
    1/2 teaspoon salt
    1/4 teaspoon sugar
    1/4 teaspoon minced garlic
    1/8 teaspoon freshly ground pepper
    1/8 teaspoon dry mustard
    1/2 cup vegetable oil
    2 tablespoons crumbled blue cheese

    Recipe

    1. Place potatoes in large pot of lightly salted water; bring to a boil over medium-high heat. Cook 15 to 20 minutes or until fork-tender, drain.
    2. Place vinegar, salt, sugar, garlic, pepper and mustard in blender; blend to combine. With blender running, slowly add oil. Add 2 tablespoons blue cheese; blend to combine.
    3. Combine potatoes, celery, onion and parsley. Add vinegar mixture; stir gently. Chill several hours or overnight. Before serving, sprinkle with 2 tablespoons blue cheese; toss lightly.

    Yield: 6 Servings
