Seafood: Lobster and Spinach Salad

1 Maine lobster 1 1/2 pounder
1 pound spinach
4 xlices of white bread
2 avocados ripe
2 limes
heavy cream 4 tbsps
sprigs of mint
chopped green onions
Equipment:
Hand mixer, mixing bowl, serving dish
Recipe
Cook the lobster in boiling water 7 minutes, Salt the water and use 1 lemon.
Cook the spinach as usual (al dente).
Mount the spinach on to of a sliced white toated bread. Top with a medaillon of lobster. pour the sauce around the center piece decorate with dobs of chopped green onions and sprigs of mint
