    Salsa: Caribbean Heirloom Tomato Salsa

    List of Ingredients

    1 1/2 cups diced assorted heirloom tomatoes, see note *
    1/2 cup diced peeled mango
    1/2 cup diced peeled papaya
    1/2 cup diced red sweet onion
    1/2 cup diced yellow pepper
    1/2 cup diced red pepper
    1/2 cup diced banana pepper
    4 teaspoons minced fresh basil
    4 teaspoons minced fresh cilantro
    1/3 cup fresh lime juice
    1 teaspoon jerk seasoning
    Sea salt and pepper to taste

    Recipe

    Combine all ingredients in a glass bowl; toss well. Let stand at room temperature 2 hours. Makes an excellent garnish for grilled fish and chicken.

    Note: You can use regular tomatoes as well.
