1 lb. sugar
1 split vanilla bean
¼ teaspoon cayenne pepper
½ teaspoon ground cinnamon
24 oz. warm heavy cream
Recipe
Place sugar and vanilla bean over high heat. Stir continuously until caramel is light amber color. Add cayenne pepper and ground cinnamon. Whisk continuously while slowly adding warm heavy cream, a little at a time. Do not allow mixture to boil. Pass through chinois. Allow to cool.
