    Glaze: Coffee Mandarin Glaze

    2 tablespoons unsalted butter
    1/2 cup fresh orange juice
    1/2 cup strong black coffee
    1/4 cup coffee- flavored liqueur, Tia Maria recommended
    1 teaspoon arrowroot, or cornstarch

    Recipe



    Dissolve the sugar in a heavy sauce pan over medium heat, stirring until it becomes a light brown caramel.

    Immediately stir in the butter. When melted, stir in the orange juice, coffee and liqueur. Reduce by 1/2.

    Sugar should be dissolved, stir in the arrowroot to thicken. when thick, remove from heat and keep warm.

    NOTE: This sauce is delightful with duck or pork.
