Recipe Introduction
Classic Tomatoe Sauce is made from tomatoes, Vegetables,
seasonings and white stock Thickened with roux*.
Today tomato sauces are made from tomatoes, herbs, spices,
vegetables and other flavors. Simmered and pureed.
List of Ingredients
Salt Pork, small dice 4 ozs.
Mirepoix 1 lb. 8 ozs.
Tomato, fresh or canned 3 qts.
Tomato Puree 2 qts.
Sachet:
Dried Thyme 1 tsp.
Bay Leaves 3
Garlic Cloves 3
Parsley stems 10
Peppercorns, crushed 1/2 tsp.
Salt 1 1/2 oz.
Sugar 3/4 oz.
White Stock 3 qts.
Pork Bones 2 lbs.
Recipe
1. Render the salt pork over medium heat.
2. Add the mirepoix** and sauté, do not brown.
3. Add the tomatoes, tomato puree, sachet, salt, and sugar.
4. Add the white stock and bones.
5. Simmer slowly for 1/2 -2 hrs. or until desired consistency has been reached.
6. Remove the bones and sachet, pass the sauce through a food mill. Cool in a water bath and refrigerate.
YIELD: 1 Gallon
* Roux is a thickening agent made from equal parts of fat(butter or oil) and flour cooked till desired color.
** MirePoix is a vegetable blend of 50% Onion,25% Carrots,and 25% Celery
Cajun MirePoix is 40% Onion,25% Celery,25% Green Bell Pepper,and 10% Minced Garlic
