Hot: Rockefeller Sauce

4 tbsp Unsalted Butter or Margarine
2 stalks Chopped Celery
6 Chopped Green Onions
1 bunch Chopped Parsley
1 package Frozen Spinach (cooked and drained)
1 tbsp Anchovy paste
1 tbsp Ketchup
1/4 cup Herbsaint or Pernod
1 stick Softened Butter
Pepper - black or white
Tabasco
Recipe
Melt 4 tbsp butter. Saut� the celery, green onions, and parsley until tender. Add the spinach.
Place the ingredients in food processor and pur�e.
Add the anchovy paste, ketchup, Herbsaint and pepper.
Season to taste.
Whisk in the remaining stick of butter a little at a time to thicken the sauce. Keep warm.
