Salsa: Nectarine Salsa

Combine all ingredients in a glass bowl:
4 nectarines, peeled and diced
1/4 cup red pepper, diced
1/2 cup red onion, finely chopped
1 T garlic, minced
1 1/2 tsp jalapeno pepper, minced
2 T shallots, minced
3 T fresh cilantro, chopped
2 T orange juice
1 1/2 tsp honey
salt and pepper to taste
Serve over grilled chicken breasts or as a dip for chips.
