    Salsa: Spicy Cantaloupe Salsa

    1 cantaloupe, flesh scooped into balls
    1/2 medium red onion, diced
    1/2 cup sugar
    2 jalapeno peppers, seeded and chopped fine
    1/4 cup red wine vinegar
    3 tablespoons curry powder
    pinch of fresh cilantro

    Recipe



    Caramelize the sugar, until it melts and slowly turns a rich mahogany color. Add the melon balls, chopped jalapenos, onions, cilantro and vinegar, curry powder, taking care not to get burned if it spatters. The caramel will soften and melt into the melon juice that is released as it heats. Now cook the mixture, stirring occasionally until the fruit softens a bit, about 5-8 minutes. Cool at room temperature. Refrigerate in an airtight container and it will keep for approximately a week.
